Beetroot and buffalo feta salad

This salad is so easy to put together. Just roast whole beetroots by wrapping them in aluminum foil with some salt, olive oil and lemon juice. Once soft enough to pierce with a knife (about 1hour at 180deg) unwrap and cut into chunks, saving all the juices. Season with salt, lemon and extra olive oil while warm. Add walnuts, chunks of feta and baby spinach or rocket or finely shredded lettuce. Serve immediately.

    That beetroot and feta salad sounds delicious.

    I have a ‘dumb’ question though: do you peel the beetroot before roasting or after or just eat the skin?

    I’ve tried to compare the cravings I get every now and then for pizza or burgers or schnitzel but even during the worst cravings for those things everything within me would yearn for that simple salad – just divine.

    Thanks for this project, I don’t know if you know just how much of a profound effect it is going to have on us readers while it happens and others when they stumble upon it in months/years to come.

      Well I don’t mind the skin of the beetroot. It can be a little bitter, but these were young organic ones, so the skin was fine to eat. I just made sure they got a really good wash before I roasted them. In the past I have found that peeling and chopping them before roasting makes them leach more of their juice and colour so I prefer to leave them whole and chop them after. If they are bigger older beetroots, I will peel them, but it’s fiddley and you’ll have pink hands for days!
      It’s a personal choice.
      They will cook quicker if you peel and chop them first. So if you’re in a rush do that first. Just make sure you have salt and lemon juice on hand to clean your hands and chopping board!

    I roasted some beetroot tonight (hubby and kids were not impressed lol) but I wore kitchen gloves when peeling so I didn’t get red fingers ;)
